Garden Salsa

compliments of Dottie and Gary

1 - 1 1/2 lbs. tomatoes chopped
1/3 cup canned green chilies, chopped small
1/2 a jalopeno pepper, chopped
1 medium onion, chopped
1/4 cup fresh cilantro, chopped
1 large garlic clove, chopped
1/4 lb. tomatilos, skinned and chopped
2 cups fresh corn from the cob or 1 (16 oz.) can corn kernels
1 tbsp. crushed oregano
fresh chopped parsley
1/2 tsp. cumin (or to taste)
1/2 tsp. salt
black pepper
good splash of white vinegar
 
All of the chopped ingredients can be put into a chopper or a blender to chop to a coarse chop (not too small). Add the remaining ingredients and adjust flavor according to taste. Simmer for 5 minutes to get flavors to mix. Let cool and serve with taco chips. Will keep in the refrigerator if it lasts that long!
